Ingredients

  • 1/2 cup raw almonds, chopped
  • 1/2 cup raw walnuts, chopped
  • 1/2 cup raw pecans, chopped
  • 1/2 cup rolled oats, ground into a coarse meal
  • 1/4 cup pumpkin seeds
  • 3/4 tsp cinnamon
  • 1/8 tsp salt (optional)
  • 3 tbsp maple syrup or date paste
  • 1 tsp vanilla extract
  • 2 small bananas, sliced
  • 2 cups blueberries or other berries
  • 2-21/2 cups unsweetened plant milk

Method

  1. Preheat the oven to 350°F and line a baking sheet with parchment.
  2. In a large bowl, combine the chopped nuts, oat meal, and pumpkin seeds with the cinnamon.
  3. Whisk the maple syrup and vanilla together, then pour over the nut mixture and stir until coated.
  4. Spread evenly on the baking sheet, sprinkle with salt if using, and bake 12 minutes, stirring halfway.
  5. Cool for 10 minutes so the granola clusters, then divide between four bowls with banana, berries, and plant milk.

Tip: The granola keeps on the counter for a week, or in the fridge for two - make extra.
