Ingredients

  • 2 cups cooked brown rice
  • 1 cup carrots, cut into matchsticks
  • 2 tsp sesame seeds
  • 1/4 cup water
  • 2 cups shiitake mushrooms, sliced
  • ¾ cup water
  • 1 tbsp reduced-sodium tamari
  • 4 cups chopped spinach
  • 1/2 cup water
  • 2 cups mung bean sprouts
  • 1/2 batch crispy tofu bites (optional)
  • 1/2 cup pickled cucumbers
  • Bibimbap or gochujang sauce, to taste
  • 2 tsp sesame seeds, to serve

Method

  1. Cook the carrots with the sesame seeds in a hot pan for 1 minute, then add the water, cover, and cook 3 minutes until tender. Set aside.
  2. In the same pan, cook the mushrooms with ¾ cup water over medium heat until the water evaporates, 5- 7 minutes, then stir in the tamari.
  3. Cook the spinach with 1/4 cup water until wilted, draining any excess liquid.
  4. Blanch or quickly sauté the bean sprouts until just tender.
  5. Divide the rice between bowls and arrange the carrots, mushrooms, spinach, sprouts, tofu, and pickled cucumber on top.
  6. Drizzle with sauce and sprinkle with sesame seeds.
