Ingredients
- 250g brown rice, rinsed
- 150g red lentils, rinsed
- 800ml vegetable stock
- 1 can chopped tomatoes
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp garam masala
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1 tsp coconut oil
Method
- Saute garlic and ginger paste in coconut oil in the pressure cooker for 60 seconds.
- Add all dry spices and stir for 30 seconds until fragrant.
- Add rice, lentils, stock, and tomatoes. Stir well.
- Seal and cook on high pressure for 18 minutes.
- Natural release for 10 minutes, quick release remaining steam, then stir vigorously. The lentils will thicken the base.
Flavour variations
- Punjabi Tadka
- In a small pan, heat oil and add 1 tsp mustard seeds, dried red chilli, and a pinch of asafoetida. Pour the sizzling tadka over the cooked dal just before serving.
- Coconut Dal
- Replace 200ml of stock with coconut milk. Add a squeeze of lime and fresh coriander to finish.
- Saag Dal
- Stir through 2 large handfuls of spinach immediately after opening the lid. The residual heat wilts it perfectly.
- Tomato & Tamarind
- Add 1 tbsp tamarind paste and an extra can of tomatoes for a more acidic, restaurant-style flavour profile.
Tip: Red lentils break down completely under pressure, thickening the base naturally without any blending. If it is too thick, add a splash of hot water and stir.
Highlights: High in iron, folate and vitamin A.
